(CMR) Christmas is a special time for families in the Caribbean. It is a time when we enjoy some of our favorite dishes together and have fun. While some of the meals are a part of your family tradition, you may find that other families across the Caribbean enjoy some of the same dishes at Christmas. Here are some popular foods enjoyed across the Caribbean at Christmas:
1. Fruit Cake, sometimes referred to as black cake or rum, is a popular pastry made from fruits soaked in rum or wine. This is especially popular in Trinidad and Tobago, Barbados, and Jamaica. It is called black cake because of its dark color, fruit cake because it is made from fruits, and rum cake because it is usually soaked in rum.
2. Sorrel is a trendy drink enjoyed throughout the Caribbean, especially at Christmas. It is made from the sorrel plant, and its flavor is usually enhanced with rum and ginger.
3. Curry goat or any curry meat is a favorite in the West Indies, but curry goat is especially popular at Christmas. This is a stew made from goat meat seasoned with curry and a variety of West Indian spices.
4. Honey glazed ham is a must-have in many Caribbean homes at Christmas. Glazes are made with various mouth-watering ingredients, including pineapple, ginger, honey, cinnamon, cloves, marmalade, and sugar.
5. Gungo peas and rice or red beans and rice are important for Christmas in many Caribbean households. The rice and peas or beans are usually cooked in a rich and well-seasoned coconut milk, which brings out a rich flavor.
6. Oxtail is an all-time Caribbean favorite. The cooking method varies from island to island, like most dishes, with each island's oxtail having a slightly different taste.
